Yummy Vegan Cookies!!

These are Jonathan's favorite cookies in the world. (And that's saying something because I've made a lot of cookies in my time.) We made them tonight and thought they must be shared with all of you out there in cyberspace. So go get your spatula and start making these! (If you do make them let us know if you like them or not!!)

2 ripe bananas, mashed
1 tsp vanilla
1/2 cup sweetener (sugar, honey, etc.)
1/2 cup oil
3 tsp milk (we used soy, but you don't have to)
1 cup flour (we used wheat flour and it was good)
1 tsp baking soda
1 tsp cinnamon
1 cup oats
1 cup coconut
1 cup chocolate chips (or more !!)
(We also added a few walnuts to half the batch)
Mix the bananas, vanilla, sweetener and oil in a food processor (or just use a spoon and mix a lot). Add the flour, soda, and cinnamon. Mix. Then toss in the oats coconut and chocolate and stir. Place by tablespoonfuls onto a cookie sheet and bake in 350 degree oven for 8-9 minutes. Then eat and marvel at how a cookie can taste good without eggs. Weird.

Update:
Ezra has fallen asleep on his own for 9 nights in a row (with the help of the Thomas pillow)!! It's a miracle!!

That truly is a miracle ... a Festivus miracle! :) Hooray for Thomas! And I just might try those cookies ... with less cinnamon and no coconut (in my half--Casey will want it). Glad you shared the recipe!

The cookies were great!! Thank you for bringing some over that was nice...also it is NEVER to late to bring food to our house, we will wake up for it!
